Coming Summer 2025: The Geo Trail Extension!
The final push to complete the Klamath Falls Geo Trail is upon us. We are very close to realizing the project and with your support, we will be able to complete the Geo Trail Extension by the summer of 2025!
The project was a once seemingly ambitious idea by Katherine Pope and the late Dr. Stephanie Van Dyke, the two people responsible for pioneering the project. Through community support, the Wellness Center, Healthy Klamath and KTA (Klamath Trails Alliance), the current Geo Trail became a reality and was completed in 2016.
Since then, the trail has been consistently used by community members, Sky Lakes employees and OIT students, providing amazingly scenic views and opportunities for relaxation and physical activity all year round. The nearly 2-mile long recreational trail is located in the foothills Hogback Mtn and links Crystal Terrace, Sky Lakes Medical Center and Oregon Institute of Technology.
The Geo Trail extension will connect the last leg of the trail, providing easy access from neighboring communities in the south from Harmony Lane and direct access for residents of Crystal Terrace from their doorstep.
Easy access to trails and open spaces will encourage thousands of nearby residents, employees and students to recreate.
Improved Connectivity - the trail extension will improve the long-term biking/walking and commute option for Sky Lakes, Oregon Tech employees/students and surrounding communities.

Legalize Trail Access – KTA will maintain legal access through trail agreements with landowners.
Improved User Experience – instead of utilizing a sometimes dusty or muddy dirt path trail users will now travel on an all-weather compacted gravel path.
Improved Public Health – trails and outdoor recreation are critical elements to improving our mental and physical well-being.

Can you tell we're excited about Summer Lunches this year? Here is a break down of our sites, what's being offered, and the new rules in place We are so thankful that the USDA & ODE which make this program happen have recognized the barriers faced in previous years, and have allowed us to move back to Grab & Go style meals! We feel this change will not only feed more hungry youth, but be a bigger help to parents during the summer!

Chicken and Dumpling Casserole
Simple yet comforting dumplings with chicken and vegetables are ready in less than an hour!
Ingredients
CHICKEN MIXTURE
3 Tablespoons vegetable oil
1 cup chopped onion (about 1 medium)
1 cup chopped carrot (about 2 small)
1 cup chopped celery (about 2 stalks)
3 cups low-sodium chicken broth (see Notes)
3 Tablespoons flour
2 cups chopped cooked chicken or turkey (see Notes)
1 cup frozen peas
½ teaspoon salt
¼ teaspoon black pepper
DUMPLINGS
1 cup flour
2 teaspoons baking powder
¼ teaspoon salt
1 egg
⅓ cup 1% or nonfat milk
Directions
Wash hands with soap and water.
Rinse or scrub fresh vegetables under running water before preparing.
Preheat oven to 400 degrees F.
Chicken mixture: In a large skillet, add oil and heat over medium-high heat (350 degrees F in an electric skillet). Add onion, carrot and celery and cook until soft.
Add a small amount of unheated broth to the flour and stir until smooth. Slowly mix in remaining broth and add to skillet. Stir over medium heat as the mixture thickens.
Add the chicken, peas, salt and pepper. Heat on low while making dumplings.
Dumplings: Mix the flour, baking powder and salt together in a mixing bowl.
Add the egg to the milk and beat until well blended. Stir into the flour until well combined.
Pour the chicken mixture into a lightly greased casserole dish. Drop dumpling dough by spoonfuls onto chicken mixture (makes about 8 dumplings).
Bake uncovered for 15 minutes or until the dumplings are golden brown.
Refrigerate leftovers within 2 hours.
Notes
Broth can be canned or made using bouillon. For each cup of broth use 1 cup very hot water and 1 teaspoon or 1 cube bouillon.
To make it easier to re-use measuring cups, mix the dry ingredients for dumplings before preparing the chicken mixture.
