Southside Bypass Roundabout Art Installation

July 3rd 2025 marks the date the Southside Bypass Roundabout Art Installation project has finally come to fruition. This was a collaboration between Healthy Klamath, Oregon Department of Transportation, Diversified Contractors Inc, Klamath County, The City of Klamath Falls and Sky Lakes Medical Center and was managed from ideation to completion by Healthy Klamath Project Manager Kelsey Mueller Wendt.

The powerful, striking, magnificent and inspiring sculpture was expertly designed and crafted by renowned artist Stefan Savides and stands atop of a 10 ft pedestal making this his largest work to date.

This art symbolizes Klamath’s dedication to enhancing its public spaces and enriching the local art scene, transforming the roundabout into a true landmark of beauty and pride for our community.

Chicken Cabbage Stir-Fry

Quick dinner idea combining crisp-tender veggies with ginger, garlic and soy sauce. You can switch the veggies and proteins to fit what you have on hand.

Ingredients

3 chicken breast halves, cut into strips

1 teaspoon vegetable oil

3 cups shredded green cabbage (½ head)

1 Tablespoon cornstarch

½ teaspoon ground ginger

¼ teaspoon garlic powder or 1 clove garlic, finely chopped

½ cup water

1 Tablespoon low-sodium soy sauce

Directions

  1. Wash hands with soap and water.

  2. Rinse fresh vegetables under running water before preparing.

  3. Heat oil in a skillet over medium-high heat (350 degrees F in an electric skillet).

  4. Add chicken strips and stir-fry, turning constantly until done.

  5. Add cabbage and stir until cabbage is crisp-tender, about 2 minutes.

  6. In a small bowl, mix cornstarch and seasonings. Add water and soy sauce; mix until smooth.

  7. Stir sauce into chicken and cabbage mixture.

  8. Cook until sauce has thickened and chicken is coated, about 1 minute.

  9. Refrigerate leftovers within 2 hours.

Notes

  • Add bell peppers or carrots to stir fry for color.

  • Try stir fry with broccoli.

  • Make this dish vegetarian by using Food Hero Baked Tofu, instead of chicken.
