Movember is Community, Fitness & Men’s Health Awareness

Movember is an annual, global awareness campaign held every November — The idea is simple: during the 30 days of November, participating men grow moustaches — often starting clean-shaven — as visible conversation starters about men’s health. But Movember is more than facial hair: it’s also about raising awareness, sparking conversations, and raising funds for issues often stigmatized or neglected — like prostate cancer, testicular cancer, mental health, and suicide prevention.

In Klamath Falls, local organizations have embraced Movember with more than just moustaches. Healthy Klamath and Klamath Basin Behavioral Health (KBBH), has once again collaborated to bring the campaign to life via community events, fitness challenges, and public participation.

This November, men and women from local first-responder agencies participated in the “Strut Your Stuff Challenge” competing for the best times in the local first responders physical aptitude tests. Participants include staff from the Kingsley Air Force 173rd Fighter Wing,  Klamath Falls Police Department, the Klamath County Fire, and the Oregon Department of Forestry (ODF).

There are 4 demanding physical challenges, one for each week of the month. This year, ODF once again kicked off the season by hosting the onerous obstacle course at the ODF facility followed by the Oregon Physical Abilities Test (ORPAT) at Klamath Falls Police Department. Klamath Community College Fire Science was the third event where participants competed at the demanding fire science course and lastly, Kingsley hosted the Air Force Physical Fitness Assessment at the Kingsley Air Force Base. Beyond the fun and competition, guest speakers shared their expertise, knowledge and personal experiences to reflect on man’s physical and mental health, promote awareness about male-specific health risks, and reduce stigma around seeking help.

The winning team will be announced at the annual Movember Celebration and MOstache Contest on December 11, 6:00 pm at the Klamath Falls Yacht Club. This event and the moustache contest is open to the public so we hope to see you there!

Ho ho ho! Santa will be visiting the Klamath County Library! Bring your kiddo to one of our library branches for a chance to meet Santa!

The Dec 6th event at Crescent is also their open house! This event will be from 2-5 PM, and will include a story time with Librarian Shawn! They will be serving Christmas cookies, punch, coffee and tea. If that isn't enough, the Crescent Library will also have a raffle for a meal for 2 at the Mohawk Restaurant!

Vegetarian Tofu Enchiladas

Tofu provides protein while mushrooms provide texture and umami flavor in these easy enchiladas.

Ingredients

2 Tablespoons vegetable oil
12 corn tortillas (5 to 6 inches)
2 ½ cups low-sodium tomato sauce or enchilada sauce (red or green)
2 packages (14 to 16 ounces each) extra-firm tofu
½ teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons basil
1 teaspoon red pepper flakes (optional)
½ cup fortified nutritional yeast (see Notes)
½ cup sliced olives (any type)
½ cup sliced mushrooms (any type)

Directions

Wash hands with soap and water.

Rinse fresh vegetables under running water before preparing.

Preheat oven to 250 degrees F.

Lightly brush oil on each side of the tortillas and lay them on 2 large baking sheets. Bake for 10 minutes.

While the tortillas are baking, drain the tofu and place on a plate or tray. With a cloth or paper towels, press the tofu to remove extra liquid. Crumble tofu into a large bowl.

Remove tortillas from the oven and set aside. Turn oven to 350 degrees F.

Add salt, onion powder, garlic powder, basil, nutritional yeast and red pepper flakes, if desired, to the tofu. Mix well.

Spread ½ cup sauce on the bottom of an 8x11-inch baking dish. Layer 6 tortillas on top of the sauce. Spread ½ cup sauce over the tortillas.

Spoon ½ the tofu mixture over the tortillas. Pour ½ cup sauce over the tofu.

Make another layer of 6 tortillas. Spoon the remaining tofu on top. Pour the final ½ cup sauce over the tofu.

Top with sliced mushrooms and olives. Bake for about 30 minutes.

Let rest for 5 minutes before cutting and serving.

Notes

For fresh flavors and less sodium, try using Food Hero Salsa Roja or Salsa Verde for the sauce.

Nutritional yeast is a food product that is often fortified with vitamin B12. Besides adding it to this recipe, you can sprinkle it on popcorn or rice and beans, or stir it into soup for a savory, cheesy flavor. Look for it in the spice or bulk area of your grocery store.

Enjoy these enchiladas the next day for any meal. The flavors blend in the refrigerator overnight.
